<span style="font-size: 14pt; margin: 0px;">2 Fresh Lemon Grass</span><br />
<span style="font-size: 14pt; margin: 0px;">1 Large Onion</span><br />
<span style="font-size: 14pt; margin: 0px;">2 Cloves Garlic</span><br />
<span style="font-size: 14pt; margin: 0px;">1/2" Fresh Ginger</span><br />
<span style="font-size: 14pt; margin: 0px;">1 table spoon Dried shrimps (or shrimp paste
aka belacan)</span><br />
<br />
<span style="font-size: 14pt; margin: 0px;">Blend all the ingredients together </span><br />
<br />
<span style="font-size: 14pt; margin: 0px;">Cooking oil</span><br />
<span style="font-size: 14pt; margin: 0px;">2-3 tbl spoonCurry powder</span><br />
<span style="font-size: 14pt; margin: 0px;">1 tin Coconut milk</span><br />
<span style="font-size: 14pt; margin: 0px;">Chicken pieces (breast or thighs and cut into
small pieces)</span><br />

<span style="font-size: 14pt; margin: 0px;">Chicken stock</span><br />

<span style="font-size: 14pt; margin: 0px;">For garnish, blanch bean sprouts,
chopped coriander leaves, chopped spring onions and Pre-Fried onions</span><br />

<span style="font-size: 14pt; margin: 0px;">Egg Noodles - blanch</span><br />
<br />
<span style="font-size: 14pt; margin: 0px;">In a heated wok with cooking oil, put in the
blended ingredients and cook for about 3-4 minutes or until there's
a lovely aroma. Add in the curry powder, add in the coconut milk, the
chicken and a cup of water. Add in salt to taste and chicken stock.</span><br />

<span style="font-size: 14pt; margin: 0px;">Leave until the chicken is cooked.</span><br />
<br />
<span style="font-size: 14pt; margin: 0px;">When read, put the one serving of noodles in
a bowl, add in hot curry sauce over the noodles. Garnish with the blanched bean
sprouts, chopped coriander leaves, chopped spring onions and the pre-fried
onions.</span><br />

<br />
500gm deboned chicken (breast or thigh) - slice in small pieces<br />
salt to taste<br />
Cooking Oil<br />
1/2 cup of fresh coriander leaves<br />
1/4 cup of mint leaves<br />
5 shallots or 1 large red onion<br />
3 red chillies<br />
5 tbl spoons glutinous rice <br />
Lime juice<br />
3 tbl spoons of fish sauce<br />
<br />
In a dry pan roast the glutinous rice until slightly brown. Then roughly pound in pestle and mortar whilst still warm. Then leave to cool<br />
<br />
Then in the same pan, use about 2 tbls spoons of cooking oil and cook the chicken pieces for about 10 minutes or until cooked. Add salt to taste. Cook until any liquid from the chicken has dried up. Then put into a large bowl.<br />
<br />
Roughly chop the fresh coriander leaves, mint leaves. Dice the onion/shallots thinly and add these ingredients into the chicken.<br />
Remove the seeds from the chillies and pound with pestle and mortar. Be careful not to get any chilly juices splash into your eyes. Add to chicken bowl.<br />
Add in the lemon juice and fish sauce and mix well.<br />
Taste to see if you need to add any more of the above ingredients.<br />
Then add in the pounded glutinous rice into the bowl to give a bit of crunch.<br />

<span style="color: #741b47;">8• Melt Choc on a double boiler or if you use a microwave, make sure you only use it for 30 secs on high and repeat 2-3 times to avoid burning the melting chocolate</span></div>

<span style="color: #741b47;">7• Once cookies are baked, leave to cool then coat the cookies with the melted chocolate and put into cases, decorate with crushed almonds, leave them for another 15 minutes for the chocolate to harden.</span></div>

<span style="color: #783f04; font-size: small;"><b style="color: red;">7•</b> Then fry the onions the same way and lay this on top of the carrots in the rice cooker.</span></div><div style="font-family: "Trebuchet MS",sans-serif;"><span style="color: #783f04; font-size: small;"><b style="color: red;">8•</b> Now drain the rice and pour the rice over the onion.</span><br />

It should only just cover the rice.<br />

Remember grilling the layers will only brown the top layer, it does not cook the cake.<span style="color: red;"><b> </b></span></span><span style="font-size: small;"><b><span style="color: red;"></span></b></span><span style="font-size: small;">So test if the cake is now cooked and cover with kitchen foil over night or let it cool down for 1-2 hours.<br />
